Saint-Aubin AOC

The Saint-Aubin appellation is located in the vineyards of the Côte de Beaune, in the Côte d'Or, and can only be produced in the commune of the same name. Thanks to its immediate proximity to the Grand Cru Montrachet, Saint-Aubin benefits from a terroir conducive to the production of great wines. The Village appellation includes about 20 Premiers Crus divided into several groups. Even though it is not the most famous of the Burgundy appellations it offers excellent value for money. It is known for both white wines from Chardonnay and red wines from Pinot Noir. The red wines are silky and lively in texture and they display some red and dark fruit flavours together with some spicy notes, sometimes even mocha. The white wines, which represent the majority of the wines produced, are firm and flattering. When young they have aromas of white flower, flint and green almond. With some ageing they reveal some beeswax, marzipan and honey notes. Perfect with shellfish or some firm-textured fish like cod. The appellation is perfectly showcased in several estates such as Maison Chandesais, Domaine Roux Père et Fils, Domaine Vincent Latour and Domaine Henri Boillot.

Appearance: The red Saint-Aubin has a dark garnet colour with hints of raspberry.

Nose: The intense and deep nose reveals aromas of red and black fruits such as cherry, blackcurrant and blackberry. The second nose offers spicy, cocoa and mocha notes.

Palate: The palate is full-bodied and silky with a lively finish. The evolution makes the wine supple and warm, with a lingering sensation.

Serving temperature: 15-16°C

Ageing potential: Four to six years (up to 10 or 15 depending on the vintage)

DRY WHITE WINE

Appearance: The white wines of the appellation have an elegant, bright golden colour.

Nose: The nose reveals aromas of white flowers, fresh almond, orange blossom and fern. Mineral scents are also revealed with flint. With age, the wine offers notes of honey, almond paste and cinnamon.

Palate: On the palate, it is a wine with a lively attack in its youth.
It is a very refined wine, the structure is firm, complete and full-bodied.

Serving temperature: 12-14°C

Ageing potential: Six to ten years (up to 15 depending on the vintage)

This wine, with its silky tannins, goes wonderfully with Parma ham, pâté en croute, coq au vin, beef bourguignon or rabbit. As for cheese, Reblochon or Vacherin would make delicious companions.

Full-bodied and lively, this white wine goes perfectly with the iodine nuances of shellfish and seafood, freshwater fish such as trout with almonds, or slightly spicy exotic dishes. With cheese, it will complement Bleu de Bresse or Comté.

Saint-Aubin is a winegrowing village in the southern Côte de Beaune, located between the prestigious appellations of Chassagne-Montrachet and Puligny-Montrachet and close to Grand Cru Montrachet. The Appellation d'Origine Contrôlée, established in 1937, covers about 160 hectares. The AOC includes about 20 Premiers Crus, both red and white, divided into several groups. The name of the village may be accompanied by the words Côte de Beaune or become Côte de Beaune-Villages.

  • The most renowned white Premiers Crus are:
    Le Charmois, Les Murgers des Dents de Chien.
  • The most famous red Premiers Crus are:
    En Créot, Les Castets, Sur le Sentier du Clou, Les Frionnes.
