WHICH WHITE WINE WITH RACLETTE?

Raclette is a typical mountain dish, traditionally found in the Savoie and Haute Savoie regions. If its Swiss version, raclette valaisanne, is a variant of raclette savoyarde, it goes without saying that this culinary tradition comes from the Alps!

There are many options for white wines, but regional pairings are encouraged in order to stay within the same terroir. Savoie and Haute Savoie offer AOC wines that go perfectly with melted cheese dishes. Discover or rediscover local appellations such as Roussette de Savoie AOC, Apremont AOC, Chignin AOC or Chignin Bergeron AOC. These appellations of controlled origin have what it takes to counterbalance the opulence of cheese and charcuterie, thanks to a freshness and vivacity that will tickle your taste buds! Low in alcohol, fruity with a mineral mouthfeel, these young and dry white wines from the Alpine regions will bring a little lightness to this rather rich dish!

VEGETARIAN RACLETTE


Although raclettes often call for charcuterie, all it takes is a little imagination to make this dish vegetarian and absolutely sublime! Thanks to a raclette machine with a pierrade, you can grill your favourite vegetables while your raclette cheese melts quietly. In addition to the traditional potatoes, combine the flavours with tomatoes, mushrooms, onions, sweet peppers, aubergines, courgettes, broccoli... Various combinations are possible.

LAGER WITH TRADITIONAL RACLETTE CHEESE

Lager is a great beer to enjoy with friends. There are many different styles of lager, including the undisputed Pils. A member of the Lager family, Pils, Pilsen or Pilsner, originated in the Czech Republic. This light-coloured beer with a golden colour is light in alcohol, providing a thirst-quenching effect. This type of beer goes well with raclettes, especially if the cheese used is traditional. The sweet malt and hop aromas are combined with the fruity aromas that characterise lager beer. A mild cheese for a mild beer! A beer that is too aromatic or too bitter could mask the flavours of the mild cheese. To accompany your raclette, stick to a regional agreement by tasting the Pilsner from the Brasseurs Savoyards.

WHEAT BEER WITH THE SAVOYARD RACLETTE

Fresh, with a moderate bitterness, the wheat beer reveals a range of aromas that go very well with those of raclette. The citrus flavours, including lemon, which are also found in the dry white wines recommended above, contrast with the fat of the cheese. The low alcohol content of white beers makes the drink thirst-quenching and therefore perfect to accompany a winter dish like raclette.

IPA AND SMOKED BEER

For raclettes with smoked cheese or morbier, IPA beers and smoked beers are excellent options. Indeed, it is interesting to go for beers with a bit more character and with more hops. Smoked beers are becoming increasingly popular and are produced by smoking the malt.
