SAVOYARD FONDUE RECIPE

Recette fondu savoyarde

INGREDIENTS

• 250g Beaufort cheese
• 250g Comté cheese
• 250g Gruyère cheese
• 250g Appenzel cheese
• 4 glasses of white wine
• 2 country loaves
• 1 garlic clove
• 1/2 tsp mustard
• pepper

PREPARATION

1. Grate the cheeses (250g per person).
2. Slice the bread into large cubes.
3. Rub crushed garlic into the fondue pot.
4. Pour in the white wine.
5. Over low heat, add the grated cheese little by little, stirring with a wooden spoon to make it melt.
6. Once the mixture is smooth, season with mustard and pepper according to your taste. Stir.
7. At the table, turn on the fondue pot. Adjust the flame to keep the melted cheese at temperature.
8. Each guest pokes a piece of bread with a fondue fork and dips it into the fondue pot.
9. When it is almost finished, traditionally 2 eggs are broken and added with the remaining pieces of bread: Cook for 5 minutes covered before turning off the flame.

Suggested accompaniment: Green salad.

A South/South-East exposure makes this Chignin a beautiful representation of the Jacquère and of this beautiful region of Savoie.

This cuvée is full of vivacity and minerality and also offers a nice roundness in the mouth with notes of citrus, pear and passion fruit that match the aromatic bouquet of the cheeses, especially if they are summer cheeses. In fact, in summer, the cows do not just eat fodder but graze in the flowery valleys, which gives the cheese much more aromatic flavours than a cheese made with winter milk. Any cheese maturer will tell you that!
