A great winter meal, gratin dauphinois is one of the easiest to make. Convivial, it is wonderfully accompanied by a Savoyard white wine Roussette de Savoie!

POTATO AND CEP DAUPHINOIS RECIPE

PREPARATION: 25 MINS | COOKING: 50 MINS | SERVES: 6

GRATIN DAUPHINOIS AUX CÈPES

INGREDIENTS

  • 2kg potatoes
  • 250g ceps
  • 1.5l whole milk
  • 2 garlic cloves
  • 150g Comté
  • freshly grated nutmeg
  • butter
  • salt
  • pepper

INSTRUCTIONS

  1. Peel and slice the potatoes.
  2. Preheat the oven to 150°C.
  3. In a large saucepan, put the potato slices and crushed garlic. Pour in the milk. Bring to the boil.
  4. Meanwhile, grate the Comté cheese.
  5. If fresh, slice the ceps and brown them in a pan. When dry, add them to the pan.
  6. Once the contents have come to the boil and the ceps have been added, cook for 10 minutes, covered, over low heat.
  7. Season with grated nutmeg, salt and pepper.
  8. Butter a casserole dish. Cover the bottom of the dish with the mixture. Sprinkle with Comté cheese.
  9. Bake for 50 minutes.

Suggested accompaniment: Green salad, meat stew

You had all the clues... but not the name of the Domaine. The Roussette that our experts have chosen to put in the spotlight is the one from Domaine Eugène Carrel!

A white wine made solely from Altesse, a grape variety also called Roussette that gave its name to the appellation. Authentic, and even the oldest grape variety in Savoie (since the 14th century), it thrives on the steep slopes of Jongieux where the estate is located in Savoie.

Picked here at optimal maturity, the Altesse grown on the estate produces a pale golden yellow wine with scents that leave you dreaming: very aromatic, this white wine has white flowers and a ripe peach finish.

Rather exceptionally rare, the estate offers a complete range of wines: white wines, red wines, rosé wines and even sparkling wines, with a real winemaker's signature for each cuvée.

With this meal, you will undoubtedly honour the wines of Savoie and more generally Savoyard gastronomy!
