To end a festive meal on a gourmet and fruity note, there is nothing like a strawberry charlotte. And if you accompany it with a rosé wine from Côtes de Gascogne, the taste experience will be even better!

STRAWBERRY CHARLOTTE RECIPE

PREPARATION: 30 MINS | CHILLING TIME: 4 HRS | SERVES: 8

INGREDIENTS

  • 150ml water
  • 150g sugar
  • 1 lime
  • 3 gelatin leaves
  • 20 ladyfingers
  • 500g strawberries
  • 300ml whipping cream (30%)

PREPARATION

  1. Heat the water and 75g of sugar with the lemon zest and juice. Then leave to cool.
  2. Soften the gelatine sheets in cold water.
  3. Dip the biscuits with a spoon into the cooled syrup for 2 seconds. Then arrange them on the edge of a cake ring.
  4. Hull the strawberries and set aside about ten. Blend the rest to obtain a puree. Sift the mixture to remove the seeds.
  5. Heat 1/3 of the strawberry puree with the remaining sugar. When it boils, remove the pan from the heat before adding the drained gelatine. Mix.
  6. Add the contents of the pan to the remaining strawberry puree. Leave to cool.
  7. In the meantime, whip the cream. Cut the leftover strawberries into slices.
  8. In a bowl, whisk the strawberry puree with the whipped cream.
  9. Fill the cake ring halfway with the cream. Arrange a layer of strawberry slices, keeping a few for decoration.
  10. Add the rest of the cream, smooth it out, and set aside in the fridge for at least 4 hours. Decorate the cake with the remaining strawberry slices before serving.
