An accomplished cuvée, the perfect union of power and delicacy that wins over Robert Parker with every vintage!
Infiniment de L'Ou is the consummation of a body of work carried out over the past 10 years. In the warehouse, the grapes undergo complete vinification: immediately after being destalked, they are straight away left to macerate for 3-4 weeks in half-sealed barrels. The barrels are then emptied, the grapes pressed, and then the juice is poured back into the same barrels to mature for 12-14 months. From this meticulous work comes a wine of abundant delicacy, with an explosive, fruity nose and a silky and flavoursome palate. An as-yet-exclusive Languedoc wine that is nevertheless absolutely perfect to go with the best cuts of meat!

CHATEAU DE L'OU

The Château de L’Ou is above all a love story bringing together two enthusiasts of the land and the environment. Séverine, after growing up in Africa, returned to Bordeaux in her hometown to learn the wine-making profession. Very quickly, she became fascinated by the Roussillon terroirs and their constraints linked to the hot weather. Philippe, meanwhile, cut his teeth as an agronomist in Brazil before acquiring a wine estate near Perpignan and becoming one of the pioneers of organic viticulture. In 1998, the Château de L'Ou ("ou" means "the egg" in Catalan and refers to an ovoid resurgence in the past allowing mules and herds to drink from the region, a symbol inherited from the Templars who would have operated this property) only produced red wines in bulk. Today, the estate offers many cuvées of great finesse and attracting more and more interest from the press.
