GASTRONOMIC ROSÉ WINES


The Caves d'Esclans is the proud property of Sacha Lichine, who produces a range of premium rosés with those of Château d'Esclans. The estate is located just a stone's throw from the Gorges de Pennafort, in the hinterland of the Var region where the vines flourish. The Château d'Esclans is very well known in the region, since its foundation dates from the 13th century! Indeed, the castle was given by the Count of Provence to Gérard de Villeneuve in 1201, an icon of regional heritage. Surrounded by numerous flagship appellations producing the great rosé wines of the Provence Alpes Côtes d'Azur region, the property today covers 427 hectares, 140 of which are devoted to vineyards.

ADAPTED WINEMAKING

Although the rosés produced by the Caves d'Esclans are perfect companions for aperitifs, from the lightest to the most elaborate, they are above all gastronomic rosés. From the cultivation of the vines to the maturing process, very high quality standards must be respected. In order to obtain a rosé characterised by optimum freshness, the harvest is carried out early, from sunrise, and ends around midday at the latest. This allows the grapes to retain a maximum of freshness in the berry. The grapes are then transported in 10-kilo crates, so that those at the bottom are not crushed by the others. Such small crates ensure the aromatic purity of the fruit, as the grapes do not succumb to the weight of the others. As with the harvest, a manual sorting is carried out, in addition to an optical sorting, in order to select only the best grapes for the elaboration of the rosés.

Depending on the content of the juice obtained after pressing, the choice of ageing in oak barrels or stainless steel tanks is made. In order to ensure maximum freshness, a very special vinification technique has been developed at the Caves d'Esclans. Long pipes, also called 'umbilical cords' by oenologist Patrick Léon, are connected to the barrels. Very cold water circulates through these pipes, allowing the fermentation temperature of each barrel to be controlled. This technique not only ensures maximum freshness, but also minimises the taste of wood in the cuvées.

The gastronomy rosés of the Caves d'Esclans are found in the Côtes de Provence AOC. The complex and refined aromatic profile of each cuvée allows them to be served with a wide variety of dishes, from the simplest to the most elaborate! The freshness, the delicious aromas of red fruits, as well as the spicy touch that reveals itself on a supple finish, allow Sacha Lichine's rosé wines to accompany a summer aperitif composed of seasonal fruits and cold meats, as well as an entire meal up to dessert. On the palate, it is all of Provence that can be tasted! This is why the favourite dishes of these exceptional rosés are Provençal cuisine such as stuffed peppers, ratatouille or a Niçoise salad. More simply, these rosé wines with their predominant freshness will be perfect for your picnic days in the sun! FROM WHISPERING ANGEL TO ROCK ANGEL, A VARIED RANGE OF PRECISE ROSÉ WINES

Between the Caves d'Esclans and Château d'Esclans wines, the range of wines is composed of six cuvées, each with its own particularities. From the Whispering Angel to the Rock Angel, there is no doubt that these wines are one of the best rosé wines in the world! If the vinification technique used is particularly designed to produce top-of-the-range rosés worthy of the finest tables, it is also the attributes of the grape varieties grown and the work done in the plots that allow for an optimal aromatic concentration. The vineyards are planted with Vermentino, Cinsault, Merlot, Mourvèdre, Syrah and Tibouren, an indigenous variety, but it is the Grenache vines that make the reputation of the estate. The Château is known for its old Grenache vines, which are over 90 years old. The roots are deep and the vines produce only a few bunches, so the berries are concentrated in aroma.
