PRAWN CURRY RECIPE

PREPARATION: 20 MINS | COOKING: 20 MINS | SERVES: 6

INGREDIENTS

  • 1 large onion
  • 4 garlic cloves
  • 4 tomatoes
  • 1 red chilli pepper
  • 2 tbsp vegetable oil
  • 1 tbsp grated ginger
  • 1.5 tsp turmeric
  • 1 can coconut milk
  • salt
  • 1kg fresh prawns
  • 1 tbsp chopped, peeled and cleaned coriander

PREPARATION

  1. Cut the garlic and onion into thin slices, then the tomatoes into small cubes. Then finely chop the chilli pepper.
  2. Heat the oil in a frying pan. Lightly brown the onion. Add the garlic and the grated ginger and stir for 1 minute.
  3. Add the tomato cubes, turmeric and coconut milk.
  4. Then add the chilli pepper and season with salt. Mix and leave it to cook on a low heat for around 10 minutes.
  5. Add the prawns. When it comes back to the boil, reduce the heat and cook for further 5 to 10 minutes. Adjust the seasoning if necessary.
  6. Sprinkle with chopped coriander before serving the dish hot with rice.
