LAMB CURRY RECIPE

PREPARATION: 10 MINS | COOKING: 30 MINS | SERVES: 4

Agneau au curry

INGREDIENTS

  • 500g lamb meat
  • 2 onions
  • 1 tomato
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • ¼ tsp turmeric
  • 1 cinnamon stick
  • 3 cardamom seeds
  • 2cm fresh ginger
  • ¼ bunch of fresh coriander
  • 2 tbsp oil
  • salt and pepper

INSTRUCTIONS

  1. Mix the ground spices in a bowl (curry, cumin, turmeric).
  2. Cut the meat into pieces.Heat the oil in a pan and fry the chopped onions.
  3. Add the meat and brown it slightly while stirring.
  4. Stir in the ground spice mixture.
  5. Simmer over low heat for 15 minutes, covered. Add 1 tablespoon of water if necessary to soften the meat.
  6. Add the minced ginger, cinnamon stick and cardamom. Season with salt and pepper.
  7. Add the chopped tomatoes and chopped coriander.
  8. Simmer for another 10 minutes, covered, until the sauce is reduced.

Suggested accompaniment: Basmati rice

To savour this exotic simmered dish, our experts honour the typicity of the white grape variety Marsanne.

A grape variety that knows how to be powerful and complex. A Rhone grape variety, Marsanne is associated with the great white wines of the Northern Rhone Valley. Vinified as a single variety, the grape offers aromas reminiscent of white flowers, dried fruit and yellow fruit, sometimes with hints of honey.

It would be a shame not to try it.

We recommend an excellent Collines Rhôdanniennes IGP, just a stone's throw from the vineyards of the Northern Rhône Valley's great wines.

The vines planted along the meanders of the Rhône in the commune of Chavanay are grassed over to combat erosion. Yes, this wine is the result of a viticulture that respects the environment and the product. Zero insecticides, zero pesticides, with very little fertilisers, exclusively organic to respect the balance of the soil and the plant. Although it can be mechanised, manual work is favoured.

Aged 6 months on the lees in vats and barrels, this white wine is very pleasant and aromatic.

It delights the nose with its scent of white fruits, delicate flowers and citrus zest.

On the palate, it surprises with a very expressive style: everything is pure and precise. Fresh and delicious until the finish where it reveals itself as bitter and spicy. Simply a delight with the sweetness of curry!
