Filet Mignon With Prunes

In the mood for sweet and sour? Play with flavours on a tender and tasty meat medallion, the famous filet mignon with prunes. A very simple dish to which a red wine from the South-West will bring its touch of originality!

FILET MIGNON WITH PRUNES RECIPE

PREPARATION: 10 MINS | COOKING: 15 MINS | SERVES: 4

Filet mignon aux pruneaux

INGREDIENTS

  • 1 pork tenderloin (about 800g)
  • 2 tbsp oil
  • 1 shallot
  • 10 pitted Agen prunes
  • 1 glass of dry white wine
  • 1/2l veal stock
  • 1 knob of butter
  • salt and pepper

INSTRUCTIONS

  1. Cut the filet mignon crosswise into 4 equal parts. Season with salt and pepper.
  2. Heat the oil in a pan.
  3. Place the meat in the pan and sear it over a high heat. Brown for 2 to 3 minutes on each side, leaving the heart pink. Remove from the pan.
  4. In the same pan, brown the finely chopped shallot for 2 to 3 minutes.
  5. Add the prunes and deglaze with the white wine.
  6. Once the white wine has evaporated, add the veal stock and reduce until it is smooth. Season with salt and pepper.
  7. Melt the butter while stirring.
  8. To finish cooking, add the meat medallions. Soak in the sauce.

FOLLE NOIRE D'AMBAT - DOMAINE LE ROC

Vintage after vintage, the Folle Noire d'Ambat from the Le Roc estate is the purest expression of the typical South-Western grape variety: Négrette!

This rustic grape variety takes its name from the intense black colour it gives to the wine. Commonly called "Négrette", it is also known locally as "Folle Noire".

Appreciated for its strong aromatic intensity, it is the main grape variety of the Fronton appellation.

Domaine Le Roc once again delivers an authentic and fleshy red wine from the South-West, with an incomparable fruitiness. Vinified in the traditional way with a single grape variety, this is a wine of character with an expressive nose revealing aromas of violets, black cherry and pepper.
