INGREDIENTS

  • 8 large raw and peeled prawns
  • 500g coconut milk
  • 100g coconut cream
  • 40g green curry paste
  • ½ cup chicken stock
  • 100g Thai aubergines or regular aubergines
  • 2 tbsp fish sauce
  • 20g brown sugar
  • 4 small red chillies
  • 1 tsp lime or combava zest
  • 4g Thai basil leaves

INSTRUCTIONS

  1. Start by heating a wok on high heat. Pour in the coconut cream and let it simmer until the oil comes out.
  2. Then add the green curry paste and mix.
  3. Place the shrimps in the wok and cook for about 5-10 minutes. Once they are cooked, pour in the coconut milk and chicken stock. Bring to the boil before reducing to medium heat.
  4. Then add the coarsely chopped aubergines, the fish sauce and the brown sugar. Continue cooking for another 5 to 10 minutes.
  5. At the end, add the small red chillies, the lime or combava zest and the Thai basil leaves.
  6. Serve the green shrimp curry immediately.

WHAT IS ORANGE WINE?


After red, white and rosé wine, orange wine is the fourth colour of wine. Also known as amber wine, it is a white wine with a vinification process similar to that of red wine. Its production dates back to ancient times and began in the Caucasus, mainly in present-day Georgia. The winegrowers of this region developed a specific vinification technique. Crossing borders, this method was then adopted by other countries, notably Slovenia and Italy. Its characteristic colour led to it being called "Orange Wine" in the year 2000.

For the elaboration of this wine, the maceration concerns the whole bunches of the white grape varieties. The must macerates with the solid particles. This stage can take place over a few days or several months. It is traditionally carried out in amphorae, a method still used today by some estates. As far as the white grape varieties used are concerned, no specific rules are imposed. All white grapes can be vinified to produce orange wines with a variety of aromas and flavours. The technique of maceration of the white grapes favours the concentration of the tannins and the amber colour of the orange wine.
