A traditional recipe in various countries, including India, the lamb curry is a particularly fragrant simmered dish. To accompany it, a Chablis Premier Cru will match perfectly.

LAMB CURRY RECIPE

Recette curry d’agneau

INGREDIENTS

  • 750g boneless lamb shoulder
  • 400g canned peeled tomatoes
  • 400ml coconut milk
  • 200g chopped onions
  • 2 tbsp curry paste
  • 3 tbsp oil
  • 1 piece of ginger (3cm)
  • 1 small red chilli
  • 1 bay leaf

INSTRUCTIONS

  1. Start by heating the oil in a pan. Fry the chopped onions for a few minutes until golden, then set aside.
  2. Cut the lamb into large cubes. Sear them in a casserole dish with the remaining oil for 5 minutes.
  3. Also add the curry paste to the pot. Fry for 5 minutes, stirring constantly.
  4. Add the onions, grated ginger, bay leaf and coconut milk. Mix and cook over low heat for an hour and a half.
  5. Add the peeled canned tomatoes and the small red chilli 30 minutes before the end of the cooking time.
  6. Remove the pan from the heat once the sauce has thickened. Serve immediately.

WHICH WINE WITH LAMB CURRY?


To create a perfect gastronomic match, lamb curry must be accompanied by a perfectly adapted wine. Served hot as a main course, this dish is made up of meat with slightly gelatinous flesh characterised by great finesse. The meat is served in a smooth and tasty sauce with a good balance between the sweet flavour of coconut milk and the strong flavour of spices. Despite the presence of ginger, curry paste and chilli bringing strength, this dish is not too spicy.

To accompany this dish and highlight its spicy flavours, there is nothing better than a rich wine. The wine should be both powerful and delicate enough to enhance the taste of the spices without masking the delicacy of the meat. The lamb curry goes perfectly with a wine with woody nuances. To counterbalance the taste of the lamb, choose a full-bodied wine with minerality and a full, fruity texture. To bring out the flavours of this dish, the wine should have a good length on the palate.

ENHANCE THE FLAVOURS OF THIS DISH WITH A CHABLIS PREMIER CRU


To accompany a lamb curry, we have chosen a wine from the Chablis vineyards, more precisely a wine from the Chablis Premier Cru AOC. This appellation is delimited on 79 lieux-dits grouped in 17 climats, the most famous being Forêts, Fourchaume, Montée de Tonnerre, Vaillons or Mont de Milieu. The area of this appellation spreads over 8 communes, in particular Chablis, Courgis, Fontenay and Maligny. The vines are spread out on both banks of the Serein river facing or framing the vineyards of the Chablis Grand Cru AOC. They grow on clayey limestone soils made up of Kimmeridgian marl. A little higher up on the slopes, between 150 and 190m in altitude, the soils are made of limestone. As with all Chablis wines, Chardonnay is the only grape variety used. Our wine experts suggest a wine with complex aromas to enhance the flavours of the lamb curry.

With its pale golden colour, this Chablis Premier Cru allows for different combinations thanks to its aromatic complexity and elegance. The nose reveals floral and fruity aromas, apple and citrus fruits. This wine combines finesse and power to enhance the spicy flavours of the lamb curry. It creates a beautiful balance by reviving the sweetness of the coconut milk sauce while adding volume. The wine has citrus flavours on the palate with a long, saline finish: fresh with mineral undertones that blend perfectly with the creamy texture of the lamb curry sauce. The intensity and aromatic persistence of this wine enhances the flavours of this dish. Thanks to its complex aromas, this wine is a perfect match for other Asian or Oriental dishes. Thanks to its fruity notes, it goes well with fine and delicate dishes such as a lobster, lemon and coriander veal, an assortment of sushi or salmon with Provencal herbs.

This Chablis Premier Cru is made exclusively from Chardonnay. This grape variety expresses itself perfectly on the Chablis terroir like nowhere else. It ensures perfectly balanced wines, between richness in sugar and freshness. The use of old vines for its production allows it to express the character of the terroir.

CHABLIS PREMIER CRU, AN OUTSTANDING WHITE WINE WITH GREAT AGEING POTENTIAL


Representing 16% of the production of the Chablis vineyard, the Chablis Premier Cru AOC produces wines with a pale golden colour tinged with green highlights. Characterised by complex aromas with iodine and mineral notes with a background of undergrowth, it also reveals notes of citrus fruit, almonds or blackcurrant leaves. Dry and lively, Chablis Premier Cru is round on the palate. This wine is also distinguished by its great potential for ageing. It can be kept for 10 to 15 years in the cellar. A white wine that is easy to pair with food, to drink immediately or to keep in the cellar for a few years!
