Stewed Lamb Shanks With Garlic and New Potatoes

STEWED LAMB SHANKS RECIPE

Which wine to drink with stewed lamb shanks?

INGREDIENTS

  • 4 lamb shanks
  • 1 kg boiled potatoes
  • 15 small cloves of garlic
  • 1 bunch of mixed herbs (thyme, rosemary)
  • 8 tbsp olive oil
  • Guérande salt
  • Ground pepper

PREPARATION

Remember to remove the lamb shanks from the refrigerator two hours before cooking.

  1. Preheat the oven to 180°C
  2. In a large, lightly oiled cast iron casserole dish, place the 4 lamb shanks.
  3. Cover and bake for 1 hour at 180°C. Coat with the cooking juices every 1/4 hour.
  4. Cut the potatoes into chips without peeling them.
  5. Crush the unpeeled garlic cloves with the flat of a large knife, pressing with the palm of your hand.
  6. Mix the potatoes, garlic and oil in a bowl. Sprinkle with thyme, rosemary, salt and pepper.
  7. Spread the mixture in the casserole around the meat.
  8. Continue with 30 minutes of cooking. Check the potatoes for thorough cooking with the tip of a knife.

Lay out your four plates and enjoy!

Very concentrated on the palate, it expresses its delicacy through silky tannins which marry marvellously well with the melting of the potatoes and the tender and mellow flesh of the meat.
