An exceptional dish needs an exceptional wine! A caviar tasting is the ideal occasion to bring out your best bottles of Champagne. Success is guaranteed as this pairing is appreciated by all. The freshness of the Champagne meets that of the caviar thanks to the fine bubbles that stimulate the taste buds to prepare the palate for an aromatic tsunami. The buttery and brioche-like aromas of the king of fine bubbles carefully coat the caviar grain, creating a harmony of flavours on the palate. Give priority to Extra-Brut Champagnes, or even Brut Nature, to ensure a lightness and length in the mouth equal to that of the caviar. Opt for the Blanc de Blancs, whose Chardonnay grape variety is more suited to the desired effect.

1ER AND GRAND CRU CHABLIS FOR SEVRUGA AND ACQUITAINE CAVIAR


One of the varieties of caviar, "sevruga", the Russian designation for the type of sturgeon, is particularly firm and iodized. In order to ensure a harmony between the aromatic persistence of the food and the wine, it is recommended to taste this caviar with a Chablis Premier or Grand Cru. The unparalleled minerality and freshness of a Grand Cru Chablis prepares and accompanies the palate for a caviar tasting with finesse. Be careful, however, to select a Chablis that has not been aged in new oak barrels. The oak aromas do not go well with the iodine flavours. Don't risk spoiling this prestigious marriage!

Prestigious Chablis wines also go wonderfully with Aquitaine caviar. For a regional and more affordable match, some Pessac-Léognan wines offer just the right amount of freshness, minerality and length on the palate to honour the caviar's powerful aromas. Oscietra caviar is a variety that is well iodised, but it has a smoky character that the other varieties do not necessarily have. It is therefore recommended that an Alsatian Riesling be paired with Oscietra caviar. Riesling is undoubtedly the wine that goes best with the iodine in caviar. The lovely citrus and white flower notes offered by this northern grape variety bring a liveliness that balances the sometimes slightly fatty side that can be found in oscietra or beluga caviar. In addition, the Riesling variety brings subtle smoky notes that can also be found in caviar. Be careful, however, to choose a very dry Riesling and not a sweet one!
