A classic citrus dessert, lemon cake is moist and somewhat tart. The zest of the lemon in the cake adds a touch of spice and lightness to the palate and offers a little freshness at the end of a meal or during festive snacks. Simple, covered with icing sugar or with a butter glaze, the ideal wine to accompany it must be able to bring a touch of lightness and thus lighten the consistency of the cake. Tasted at the end of the meal as a dessert, the lightness brought by the wine will be all the more appreciated!
The lemon cake is best served with a sparkling wine, whose fine bubbles refresh the palate. In order to keep to the guidelines of the dessert, the ideal sparkling wine is not too dry. This is why Vinatis recommends that you enjoy your lemon cake with a Clairette de Die AOC. This appellation from the southern Rhône Valley produces sparkling wines with an alcohol content of between 7 and 9% vol. They are light, delicate and very smooth.
To sublimate this dish, the La Colombe cuvée from the Domaine des Mutte is absolutely perfect! Made with a large majority of Muscat Blanc à Petits Grains and Clairette grapes for a gourmet blend, the crunchiness of this cuvée is reminiscent of lemon. Produced according to the ancestral method, the sweetness of this sparkling wine is perfectly controlled. Its low alcohol level is appreciated as much for the tea time as to end a meal in lightness.
