Creamy French mustard chicken RECIPE

Which wine to drink with creamy French mustard chicken?

INGREDIENTS

  • 1 whole chicken (1.5kg)
  • 2 tbsp wholegrain mustard
  • 500ml crème fraîche
  • 200g Comté cheese
  • 2 tbsp rapeseed oil
  • 30g butter
  • 1 tbsp paprika
  • breadcrumbs
  • 400ml white wine
  • salt
  • pepper

PREPARATION

  1. Preheat the oven to 180°C.
  2. In a casserole, cut the meat and brown the pieces in a mixture of oil and butter. Put the fillets last as they cook faster.
  3. Once the meat is browned and returned its juices, place the chicken in the oven for 20 minutes.
  4. Collect and pour the cooking juices into the casserole. Stir in white wine, crème fraîche and mustard one by one.
  5. Then pour the cream mixture over the chicken, coating each piece.
  6. Sprinkle with a handful of grated Comté cheese, then breadcrumbs.
  7. Bake for 10 minutes until golden brown.

Suggested accompaniment: Pan-fried new potatoes

A delightful 100% Syrah with lots of texture and freshness through to the finish. A wine that is delicious and fruity. The structure is smooth and velvety, with almost jammy fruit flavours.

Frank attack, with a nice roundness in the mouth. This full-bodied wine is warm and fleshy with chicken in a creamy sauce.

This is a good way to assert itself in front of the mustard flavours without overdoing it, in a balance of complementary aromas.
