to enhance this dish: Pinot gris
Quiche Lorraine is undoubtedly the most popular regional dish in French households. The ingredients often vary according to taste and the food available, but the authentic recipe consists of shortcrust pastry, eggs, crème fraîche and bacon. And yes, there is no cheese in the original quiche lorraine recipe! Cut into bite-sized pieces, this savoury tart is all the rage as an aperitif. And what better accompaniment to this regional speciality from Alsace than a local wine! Our experts have chosen Pinot Gris for its complex, smoky aromas. They chose the region's flagship estate, Domaine Schlumberger. It produces the whole traditional range of Alsatian wines, grape varieties including Pinot Gris. Their cuvée impressed us with its great length on the palate.

The creaminess of the quiche calls for a supple, fresh and aromatic wine. This Alsatian grape variety lends itself well to the exercise: beneath its silky texture and softness, Pinot Gris hides an undeniable power. It has a formidable palate of aromas: candied, overripe, yellow fruit, quince, mirabelle plum and honey. The palate is dense, fleshy and round. This off-dry white wine is incredibly velvety, with a freshness that enhances the flavours of the quiche, not forgetting the crunchiness of the homemade shortcrust pastry!
Once mistakenly called Tokay (a name that is no longer authorised due to possible confusion with the Hungarian wine Tokaji made from the Furmint grape variety), Pinot Gris is now an Alsace AOC. Serving temperature 12°C.
