Monkfish Medallions With Bacon

Petit Chablis AOC

For a refined meal, cook monkfish in an unexpected way! A recipe for a hot starter with land and sea flavours to be served with the delicacy of a Petit Chablis.

Monkfish medallions with bacon RECIPE

PREPARATION: 1 HR 5 | COOKING: 10 MINS | SERVES: 4

INGREDIENTS

  • 2 monkfish fillets of 500g
  • 16 thin slices of smoked bacon
  • 4 tbsp olive oil
  • 1 bunch of fresh thyme
  • salt and pepper

PREPARATION

  1. Cut each fillet into 8 equal lengths.
  2. Place them in a deep dish with olive oil, thyme, salt and pepper.
  3. Turn to soak the flesh.
  4. Cover with cling film and leave to marinate in the fridge for 1 hour.
  5. Arrange the slices of bacon lengthwise. Place a piece of monkfish on top of each slice.
  6. Sprinkle some thyme on top of the fish before rolling up.
  7. Hold the rolls together with a wooden pick, that can be removed during cooking when the medallions have taken shape.
  8. In a frying pan, heat 1 tablespoon of oil and brown the medallions for 10 minutes, turning them over.

Serve hot.

Suggested accompaniment: Vegetable minestrone, green peas...
