Ceviche
&
Chilean White Wine

Ceviche is an absolute must in Latin America!
A kind of fish tartar, it is served fresh and will be perfectly enhanced by a Chilean white wine.

CEVICHE RECIPE

SERVES: 4

INGREDIENTS

  • 200g fish with firm white flesh (e.g. cod) and very fresh!
  • 6 limes
  • 2 medium-sized red onions
  • a bunch of fresh coriander
  • red chilli pepper
  • salt and pepper

INSTRUCTIONS

  • Cut the fish into small cubes of about 3 to 4 cm and soak them in a bowl of salted water.
  • Cut the onions into small pieces.
  • Arrange everything in a dish and add half the coarsely chopped coriander and the lime juice.
  • Add a pinch of red chilli pepper.
  • Marinate in the refrigerator for two to three minutes, covered with plastic wrap. The purpose of this is to cook the fish in the lime. However, it is not necessary to cover the whole of the fish with the juice, just stir the mixture regularly. Be careful, fish cooks very well in the fridge! Be careful not to let it marinate too long!
  • Meanwhile, chill a bottle of Chilean white wine, a Chardonnay or Sauvignon for example!
  • After two to three hours, drain the fish and remove some of the onions as desired. Add the remaining chopped coriander.
  • The dish is ready and should be kept in a cool place until the meal.

All there is left to do is savour it with a good glass of Chilean white wine!
