Head to South America to discover some superb New World wines to accompany a chilli con carne. The country of Chile has diversified its range of wines over the last century and now claims the title of great wine country! The fourth largest exporter of wine in the world, Chile stands out on the international scene thanks to its flagship grape variety, Carménère.
Long believed to have disappeared following the phylloxera epidemic that ravaged the world's vineyards at the end of the 19th century, Carménère was recently rediscovered. It was by chance, in the middle of the Chilean vineyard, among the Merlot vines, that Carménère was found. In reality, it was exported from France to Chile among several Bordeaux grape varieties such as Cabernet Sauvignon, Merlot and Sauvignon Blanc. Long mistaken for Merlot, Chilean wines made from Carménère were marketed under the wrong label until recently!
Wines made from the Carménère grape are rapidly gaining recognition around the world. With aromas typical of the Chilean terroir, such as vegetal, peppery and earthy notes, they are a perfect match for red meat and vegetable dishes.
To accompany your chilli con carne, Vinatis recommends a wine from the famous Bordeaux house of Baron Philippe de Rothschild. Its particularly juicy and mouth-watering character will be perfect with the texture of the dish, deliciously accompanying the tomato sauce and its juice. The well-integrated, smooth tannins will not clash with the spiciness of the chilli. Finally, the delicious aromas of black and green pepper will simply enhance the mild spices in the dish.
