In the Alpilles Regional Natural Park, where traditional vine and olive cultivation continues, a small team works meticulously to extract the best of the Provençal terroir into bottles. Their estate is Valdition. It gives birth to tasty organic wines, respectful of the terroir and carried by a formidable impulse of modernity.
The 90 hectare vineyard benefits from a wide aromatic variety. However, the estate is more interested in quality and prefers low yields to allow it to play with the diversity of its grape varieties. The best way to encourage creativity! For the Alpilles IGP cuvée, they chose a blend of Cabernet-Sauvignon, Cinsault, Grenache, Mourvèdre and Syrah.
This is the particularity of IGPs, which differ from AOCs in that they allow the winegrower the freedom to develop their know-how with innovative grape variety blends and, of course, control of the origin of production.
To distinguish between them, AOC wines can be defined as being part of tradition, while IGP wines are moving towards modernity; a freedom that is successful for Domaine de Valdition. On the magnificent stony soil of the pine forest, the meeting of these five grape varieties works wonders! A creativity that offers another richness to the Provençal vineyard and also diversifies the offer of organic rosé wines.
The principle of the estate is truly creativity and quality!
This is reflected in the constant concern to respect the terroir. From the outset, the team was keen to commit to an environmental approach by switching from integrated farming to organic farming in 2006, in accordance with the European AB (Agriculture Biologique) label. All weed killers and mineral fertilisers from agrochemicals are banned. The team prefers to work the soil mechanically and to bring in organic compost to enhance the soil: a slow and sustainable remineralisation that respects the environment, the grapes themselves and therefore the consumer.

Between the winegrower and their vine, we often talk about love...and here it's the love of the grape! The winegrower takes care to choose the best time to harvest it.
In this permanent concern for quality and to reveal the essence of the terroir, night-time grape harvests are very important. For any winemaker, the grape harvest is the crucial moment when it is up to them to determine the precise moment of picking according to the date of maturity of the different grape varieties to be blended, but also the type of wine. For the production of Alpilles rosé, the Domaine de Valdition team chose to harvest at night!
There are several advantages to night-time grape harvesting: the desired goal is freshness!
This is a way of preserving the essence of the terroir to better reveal it in the wine. The grapes must be picked as cold as possible, therefore at night.
A dry and especially fruity rosé wine! A great discovery under this label! Pale pink in colour, it makes you want to wear it on your lips.
The nose is intensely fruity and smells of garrigue!
The palate is fresh and thirst-quenching, synonymous with pleasure, with the fruitiness of sun-drenched grapes. Delicate aromas of vine peach and citrus fruit emerge.

The Cabernet Sauvignon provides the framework for the wine. Generous, it lets the other grape varieties express themselves:
Cinsault, this Provençal grape variety which works wonders in rosé blends, is appreciated for its freshness and finesse. And for the Alpilles cuvée, it is no exception to the rule!
Grenache brings body, alcohol and bouquet.
Mourvèdre gives the wine suppleness.
Finally, Syrah seduces with its elegance.

We buy it without any particular occasion, this is why it is called an "impromptu aperitif": ideally, you should have a bottle in the fridge to take out under the parasol.
But its lovely character makes it easy to serve at the table with lightly spiced Provençal cuisine, small stuffed dishes, anchovies, pan-fried prawns, a fillet of red mullet or even white meat grilled on the barbecue.
Note that it should be drunk within two years.
