PAPPARDELLE WITH PEA AND MINT PESTO RECIPE

INGREDIENTS

  • 400g pappardelle pasta
  • 150g shelled fresh peas
  • 20g fresh mint leaves
  • 50g pesto

For the pesto:

  • 1 small bunch of fresh basil
  • 60g pine nuts
  • 1 garlic clove
  • 125ml extra virgin olive oil
  • 100g Parmesan or Pecorino cheese
  • salt and pepper

INSTRUCTIONS

For the pesto:

  1. In a mortar, crush basil with garlic and pine nuts. Continue until you have a smooth paste.
  2. Add the oil and whisk.
  3. Add the freshly grated Parmesan or Pecorino.
  4. Season with salt and pepper.

For the pasta:

  1. Cook the pappardelle and peas in a large pot of boiling salted water.
  2. Cook for the time indicated on the packet and take care to stir to prevent them from sticking.
  3. Clean and chop the fresh mint.
  4. Drain the pasta and peas, reserving a little water.
  5. Put the pesto in a frying pan over a low heat and dilute it with the pasta cooking water.
  6. Pour the pasta and peas into the pan and stir very quickly until the cooking water has evaporated.
  7. Season with salt and pepper.
  8. Serve immediately with a drizzle of olive oil, a few mint leaves and a sprinkling of Parmesan or Pecorino cheese.
