A wine pairing for a successful aperitif! A French wine that fuses Syrah and Gamay for a most surprising culinary experience.

MINI SAMOSAS RECIPE

PEPARATION: 30 MINS | COOKING: 5 MINS | Makes 30 samosas

INGREDIENTS

  • 10 sheets of brick pastry
  • 300g ground beef
  • 500g stewed peas
  • 1 carrot
  • 1 onion
  • 2 garlic cloves
  • 2 tsp cumin
  • 1 tsp ginger powder
  • 1 bunch of fresh coriander
  • 5 large spoonfuls of soy sauce
  • Olive oil
  • Salt
  • Pepper
  • Cooking oil

Samoussa

PREPARATION

  1. In a frying pan over high heat, fry the chopped onions in the olive oil.
  2. Add the grated carrot and then the meat. Bring to a simmer.
  3. Mash the peas in a dish. Season (salt, pepper, finely chopped garlic, cumin, ginger and coriander)
  4. In this dish, mix with the contents of the pan.
  5. Place 1 spoonful of filling on a strip of brick pastry and fold.
  6. Cook in a little oil for 2 minutes on each side.
  7. Place the fried samoussas on a paper towel to remove excess oil.

SAMOSA FOLDING

  • Use square sheets of brick pastry, it's easier!
  • Cut them into 3 equal lengths..
  • Place a spoonful of stuffing at the end of the length,
  • Bring one corner of this end to the opposite edge to cover the stuffing.
  • Fold in this way to the end of the sheet.
  • Insert the remaining sheet towards the inside of the fold to keep the samoussa in a triangle.
