INGREDIENTS

  • 400g courgettes
  • 1 goat's cheese log
  • 2 handfuls of walnuts
  • 3 eggs
  • 150ml milk
  • 150ml double cream
  • 90g flour
  • salt and pepper
  • 4 sprigs of parsley
  • 4 sprigs of basil

INSTRUCTIONS

  1. Preheat the oven to 210°C.
  2. Cut the courgettes into fairly thick slices. Cut the goat cheese into slices as well.
  3. Crush the walnuts.
  4. Continue with the preparation of the clafoutis mixture. For this, beat the eggs in a bowl.
  5. Add the flour while mixing briskly with a whisk. Mix it with the milk without stopping to whisk.
  6. Then add the double cream and stir.
  7. Season the mixture with salt and pepper.
  8. Chop the parsley and basil leaves before adding them to the mixture, then stir.
  9. Spread out the courgette and goat's cheese slices in a baking dish with slightly high edges.
  10. Cover the dish with the egg, milk and cream mixture. Bake around 35 minutes.
  11. Remove from the oven and eat immediately or leave to cool before serving the courgette clafoutis.
