CEP AND PARMESAN RISOTTO RECIPE

Recette Risotto au parmesan

INGREDIENTS

  • 300g Carnaroli rice
  • 100g ceps
  • 2 cubes of vegetable stock
  • 1 onion
  • 100g Parmesan
  • 150ml dry white wine
  • 1 tbsp olive oil
  • 50g cold butter
  • 1 sprig of fresh parsley
  • salt
  • pepper

INSTRUCTIONS

  1. Grate 3/4 of the Parmesan cheese. Cut the rest into shavings.
  2. Prepare the stock by diluting the cubes in 300ml of hot water.
  3. Fry the chopped onion with the oil in a pan.
  4. Add the rice and fry for 5 minutes, stirring with a spatula until the grains become translucent.
  5. Pour in the wine and cook until absorbed (1 min).
  6. Add little by little the hot stock. Cover and cook for 20 minutes over medium heat. Only 1 cm of stock should remain on the surface.
  7. In another pan, brown the sliced ceps over high heat.
  8. Add them to the risotto. Adjust the seasoning. Add the cold butter and the grated parmesan.
  9. Leave to stand for 1 to 2 minutes off the heat and then mix quickly.
  10. Serve the risotto on pre-warmed plates with a touch of chopped parsley and the parmesan shavings.
