WHITE ASPARAGUS AND SAUVIGNON FROM LOIRE

White asparagus is the most popular asparagus, accounting for the bulk of production. Its white colour comes from the fact that it grows entirely underground, away from light. A real star of the simplest to the most elaborate dishes, it grows from April to June. It has a delicate, fine flavour and a sweet texture. To bring out its flavours and texture, a dry white wine made from the Sauvignon grape variety is ideal. The Loire Valley includes a number of appellations such as Touraine, Sancerre and Pouilly-Fumé, all of which produce fine cuvées made from Sauvignon Blanc.

With good aromatic intensity, the wines are fruity, the acidity is marked and the minerality adds a lovely freshness. What's more, this grape variety is known for its vegetal notes, which make it an interesting accompaniment to asparagus. Indeed, this grape variety is associated with aromas of boxwood and fern, as well as a slight bitterness, which goes well with the aromas of asparagus, which are often difficult to match.

GREEN ASPARAGUS AND VIOGNIER

Asparagus's pretty green colour comes from the fact that it grows entirely in the open air. Exposed to the sun, it develops its colour and very pronounced vegetable aromas. This is the most tender asparagus on the market, although it is just as fibrous as the others. Green asparagus is a delight to cook. It can be served as a velouté, in risotto, as a starter or as an aperitif on toast or in a glass. As its bitterness is particularly pronounced, you should avoid all red wines, even the lightest ones, as the tannins in red wine exacerbate the bitterness of dishes, even to the point of making them unpalatable. This doesn't just apply to green asparagus, either, since all white asparagus, whether green or violet, has this ferrous vegetable characteristic, with a more or less pronounced bitterness.

Although the Loire Sauvignon Blanc grape variety is just as good a match for green asparagus as white asparagus, the Viognier grape variety, found mainly in the Condrieu appellation, is absolutely superb with green asparagus. Its exuberant aromas of yellow fruit, its hint of honey and its bitterness on the palate give green asparagus an interesting and delicious balance. Its smooth texture makes it a perfect accompaniment to recipes with a similar texture.

PURPLE ASPARAGUS AND LOIRE CHENIN

Purple asparagus is nothing more than white asparagus whose head has seen the sun! When exposed to sunlight, the head of the asparagus takes on shades of violet and green. Like its white and green cousins, purple asparagus has a bitterness marked by vegetal aromas. Its texture, however, is closer to that of white asparagus, which is less fibrous than green asparagus. However, this type of asparagus has a fruitier taste than the others.


While the Sauvignon Blanc and Viognier grape varieties can once again go very well with dishes made with purple asparagus, this time turn to the Chenin variety. Chenin is the flagship grape variety of the Loire Valley, and it is in this wine region that it expresses itself best. Its yellow fruit notes are particularly well suited to the fruity side of asparagus.

RAW ASPERAGUS AND CRÉMANT DE LOIRE

A true symbol of the lengthening days and the very first picnics, white, green or purple asparagus is eaten raw. It is often served in a salad with other seasonal fruits and vegetables, sometimes with a vinaigrette or mayonnaise. All of these ingredients are supposed to be enemies of wine! Don't panic, there are a few options for food and wine pairing. For a safe bet, the Loire Valley with its leading grape varieties, perfectly suited to asparagus, is a must. Since raw asparagus is often eaten as a starter or as an appetizer at a dinner party, why not serve a Crémant de Loire?


Sparkling wines from a blend or a single-variety, they reveal lovely notes of green fruit and flowers. The fine bubbles are certainly ideal to start a meal. From a gustatory point of view, the bubbles keep the palate fresh, without weighing it down, thus preparing it to continue with more elaborate and concentrated wines, just like the dishes that follow.
