Nordic Crêpes Recipe

Ingredients
Crêpe batter
  • 300g buckwheat flour
  • 1 egg
  • 550ml water
  • 1 pinch of salt
  • butter (for cooking)
Garnish:
  • 200g smoked salmon
  • 100g fresh goat's cheese
  • fresh spinach shoots
  • 10 sprigs fresh chives
  • 1 shallot
  • fish eggs or caviar

Preparation

Prepare the pancake batter:

  1. In a bowl, make a hole with the flour. Add the egg, salt and mix.
  2. Pour in the water, stirring as you go until you have a smooth liquid paste. Leave to rest for 4 hours at room temperature.

Cooking: Cook the crepes just before filling them to be eaten hot.

  1. Once the dough has rested, heat a buttered frying pan over a low heat and pour in 1 ladleful, evenly distributed.
  2. Cook on each side, turning over as soon as the dough no longer sticks.

Tip: If you have any pancake batter left over, make some savoury pancakes for the aperitif: just roll them up with the filling from our recipe to make rounds that you can skewer.


Topping:

  1. Cook the spinach for a few seconds in a hot frying pan with butter.
  2. In a bowl, mix the goat's cheese with the chopped chives and shallot.
  3. Spread the mixture on the pancakes.
  4. Slice the salmon to garnish the pancake with the spinach shoots and fish eggs.
  5. Enjoy hot or roll up to cut into slices and put the rounds in the fridge for the aperitif.

Among these Alsatian appellations classified by grape variety, Riesling is THE wine of Alsace par excellence! The grape is vinified into sweet white wine or dry white wine. Thus, it is found under the Riesling Alsace Sélection Grains Nobles and Alsace Vendanges tardives AOCs for sweet white wines, and under the Alsace Grand Cru or Alsace Riesling AOCs for dry white wines. Among these treasures of the Alsatian vineyard, let's raise our glass to the liveliness of dry Rieslings!


Ideal with smoked fish and fish roe, dry Rieslings go well with seaside dishes par excellence! They offer an aromatic explosion on the palate that is capable of seducing even the least knowledgeable!


Very fine with an intense and distinguished aroma, these white wines first delight with their pale colour with green reflections. The nose is characterised by a fresh and invigorating aromatic palate evoking citrus fruits (lemon), white flowers (honeysuckle and lime blossom), or fruit (Mirabelle plum, green apple, pear, peach, apricot), pronounced aromas nuanced by subtle mineral notes. On the palate, the frank yet delicate character of a dry white wine that is both subtle and distinguished and superbly balanced is revealed!


With our recipe, the tasting experts at Vinatis suggest counterbalancing the full-bodied flavours of the fish and cream cheese with the refreshing and sharp acidity of a lively cuvée.

With its lemony notes and chiselled mineral structure, it will win over even the least knowledgeable. This cuvée has everything to enhance the smoked salmon of Nordic pancakes.
