Basque chicken in a dish
Ingredients
  • 1 whole free-range chicken, approx. 1.2 kg
  • 3 onions
  • 3 peppers
  • 6 tomatoes
  • 3 garlic cloves
  • 1 bunch of herbs (thyme, bay leaf)
  • 4 tbsp olive oil
  • 5 Espelette chillies
  • salt & pepper

Preparation

  1. In a pan, blanch and peel the tomatoes and peppers.
  2. Remove the seeds and hard parts, then cut into strips. Keep them for later.
  3. Thinly slice the onions and garlic.
  4. Fry them in olive oil in a casserole dish.
  5. Add the peeled tomatoes and peppers. Season with the herbs and Espelette pepper. Cover and simmer for 15 minutes.
  6. Meanwhile, cut the chicken into pieces (drumsticks, thighs, breasts, wings).
  7. Brown each piece in a cast-iron casserole over a high heat.
  8. Once browned, add the simmering vegetable mixture to the chicken.
  9. Season with salt & pepper, cover and cook over a low heat for 45 minutes.


Serving suggestion: baked potatoes or basmati rice.

Perfectly mastered, Freestyle is considered by the Estate to be the second of the famous Chemin de Moscou.
