Located north of Bordeaux on the left bank of the Gironde, Pauillac produces some of the world's best red wines. The capital of the Médoc wine region, its absolutely exceptional terroir includes three of the five First Growth from 1855 Classification: Château Mouton-Rothschild, Château Lafite-Rothschild and Château Latour. TASTING NOTES

RED WINE

Appearance: The colour is a dark ruby tending to dark garnet. These nuances reflect a powerful character, an expression of incredible density and depth.

Nose : The expression of the bouquet is that of a perfect balance between power, complexity and delicacy. It has notes of red fruits, notably morello cherry and blackcurrant. It is the expression of the Cabernet Sauvignon which brings a dominance of blackcurrant. The ageing brings a touch of vanilla, liquorice, spices and toasty notes.

Palate: The palate is full, rich, powerful, well-structured, with tight, coarse tannins. The whole is absolutely unctuous. If the Pauillacs seem very hard and tannic in their youth, it is because they need to rest in the cellar for a few more years. With time, the tannins become rounder, losing their aggressiveness. The aromas of the bouquet blossom and a delicate, fine, yet still powerful sensation takes hold of the palate.

Service: It is recommended to decant a young Pauillac wine for 2 hours before serving.

Ageing potential: The wines of the Pauillac AOC are great for ageing. They are made to be kept for a long time and are thus endowed with an exceptional potential. It is possible to keep them in the cellar for 15 to 30 years, but for many more years with the Classified Growths.

FOOD AND WINE PAIRING

RED WINE The strong tannic power of Pauillac wines allows them to accompany very tasty dishes such as game meat. When mature, they can be enjoyed with fine fish, mushroom fricassee, red meat or leg of lamb.

GEOGRAPHY

The terroir of Pauillac is absolutely exceptional. The proximity of the estuary ensures a temperature regulation essential to the growth of the vine. The remarkable homogeneity of its soils gives a real identity to the wines of this appellation. The soils are particularly poor and nothing grows there but the vine. The vine has to dig very deep to get its nutrients and water. The exceptional quality of its wines is the result of this singularity.

CABERNET SAUVIGNON : A REMARKABLE EXPRESSION!

It is in Pauillac that the Cabernet Sauvignon has found its favourite land. The wines of the appellation are made up of a majority of Cabernet Sauvignon: 70% to 80% for Lafite-Rothschild, Mouton-Rothschild and Latour. Blended with Merlot, Cabernet Franc and less frequently with Petit Verdot and Malbec, a perfect balance is achieved between colour, fruit, tannins and roundness.
