Born in the heart of the Caribbean’s sugar cane plantations, rum is a spirit whose history spans centuries and continents. When Christopher Columbus introduced sugar cane to the New World in 1493, no one could have imagined that this plant would give rise to one of the world’s most famous spirits.
Rum was originally made from molasses, a syrupy byproduct of sugar production. Consumed by sailors and slaves and used for medicinal purposes, this strong, unrefined beverage was nicknamed “kill-devil.” Over time, fermentation and distillation techniques were refined, resulting in an elegant and complex spirit.
This goes for the Kraken rum.
Whether it is agricultural rum or molasses rum, the production process remains the same. Distillation is carried out either in a pot still or in a single or double column still. This step is followed by dilution, which involves reducing the alcohol content—which reaches 80% after distillation—by adding spring water to bring it down to 40° to 55°. The rum develops its aromas and flavors during aging, a process that takes several months or years. This stage of the process is most often carried out in ex-bourbon or ex-cognac oak barrels. Some rums are aged in sherry, port, or even whiskey barrels, adding an extra layer of complexity. Bottling takes place either immediately after distillation or after several years of ageing.
While all rums are made from sugarcane, production methods vary and determine the final style.
Made from pure fresh sugarcane juice, known as vesou, agricultural rum is a designation reserved exclusively for French overseas rums, as well as those with a Geographical Indication recognized by the European Union, such as those from Réunion Island or French Guiana. To produce it, the vesou is fermented for two to three days before being distilled in a “creole column,” a small-scale column still. The result is a lively and highly aromatic rum that offers a pure expression of the terroir and all the freshness of sugarcane.
Made from molasses—a thick, very sweet byproduct of the sugar industry—traditional rum, or sugar mill rum, is the most common type of rum worldwide. Heating sugarcane juice yields sugar and molasses. The molasses is then diluted with water. Fermentation begins afterward and can last up to several days.
The richness of rum lies in its diversity. Each type is distinguished by its aging process, color, and flavor profile.
Not aged in oak barrels, white rum retains its crystal-clear transparency. Aged for a few weeks in stainless-steel tanks, it develops a light, fresh flavor. Some white rums are lightly aged in oak barrels before undergoing activated-carbon filtration, which gives them greater complexity.
Aged for 12 to 18 months in oak barrels or casks, amber rum owes its golden color to prolonged contact with the wood. This process gives it complex, woody aromas. Amber rum is generally produced from fresh sugarcane juice.
Characterized by a dark brown color, pronounced woody and spicy aromas, and a rich, full-bodied flavor, aged rum is aged in oak barrels for at least three years. This type of rum generally comes from the French West Indies. And to diversify their offerings, some producers also make non-alcoholic rum—or de-alcoholized rum—to be enjoyed neat or in mocktails.
Depending on the length of aging, different designations may appear on the rum bottle.
Rhum, rum, or ron… the spelling says it all. The world of rum is shaped by three traditions—three iconic styles influenced by colonial history.
Originating in the French West Indies, French-style "rhum"—which refers to agricultural rum—captures the freshness of pure cane juice. Highly aromatic, refined, and complex, French-style rum captivates with its herbal, fruity, or floral notes and its aromatic precision. The French West Indies, primarily Martinique and Guadeloupe, are best known for their French-style rums.
Rum refers to rums produced in the former British colonies: Jamaica, Saint Lucia, Barbados, the Bahamas, and others. Made from molasses, rum is distilled in a pot still. Distinguished by its oily texture, British-style rum is recognized by its full-bodied and robust profile.
Cuba, Venezuela, Colombia, Puerto Rico, Guatemala and the Dominican Republic all produce "ron" that is round, smooth and sweet. Influenced by Spanish traditions, this rum is primarily inspired by the Cuban style. This type of rum is produced by distilling molasses in column stills. Some rum producers use the ‘solera’ ageing method.
Whilst it impresses when enjoyed neat, rum is also a mainstay of mixology. The mojito is undoubtedly one of the best-known rum-based cocktails. Traditionally, this drink is made with white rum. Its neutral and balanced flavour profile does not overpower the fresh flavours of the cocktail.
