Negros is one of the largest islands in the Philippine archipelago. Since the 19th century, it has also been known as the Philippine cradle of sugar. Spanish colonists quickly realised that its topography and volcanic soil were particularly well suited to sugar cane cultivation. It is easy to understand why Stephen Carroll chose to settle on this island, also known as "Sugarlandia", to produce his rum. A new style of rum, Asian with Hispanic influences, named Don Papa in reference to a great historical figure of the 19th century. At once a foreman on a sugar plantation, a healer, a shaman and a revolutionary, Dionisio Magbuelas was one of the great leaders of the national revolt of 1896. The rebellion failed, as the Spanish preferred to sell the colony to the Americans rather than grant independence to the Philippines. That said, Papa Isio would certainly be very proud that a rum distilled in a column still at the Bago distillery from the molasses of the best sugar cane in Negros and aged in old American oak barrels that previously contained bourbon at the foot of the Kanlaon volcano now bears his name. And when you consider that this Philippine island has one of the highest angel's shares in the world, you can't help but think that Don Papa must be enjoying it a little.
