Most Champagnes are non-vintage, as they are made from a blend of several harvests, which gives them structure and uniformity. Only exceptional years of production can claim to have a vintage cuvée, i.e. the grapes are all from the same harvest.

What exactly is meant by Blanc de Blancs Champagne? In fact, these terms simply refer to a Champagne made from 100% white grape varieties. Although several white grape varieties have won back the Champagne winegrowers in recent years, the term 'Blanc de Blancs' usually refers to the Chardonnay grape. This grape variety with white juice and skin gives a Champagne with a beautiful golden colour and green reflections. Blanc de Blancs Champagnes are mainly produced in the Côte des Blancs, a limestone terroir, ideal for the Chardonnay grape.
The term 'Blanc de Noirs' refers to a Champagne made from black grapes with white juice. The grape varieties concerned are Pinot Noir and Pinot Meunier. Thanks to an adapted pressing, the final product has different aromas from the Blanc de Blancs. The nose is marked by red fruit, stone fruit and floral scents such as rose and peony. The golden colour is more pronounced and the palate is richer and warmer than the Blanc de Blancs.
