Stuffed sweet potatoes RECIPE

PREPARATION: 15 MINS | COOKING: 30 MINS | SERVES: 4

Patates douces farcie pour un barbecue végétarien

INGREDIENTS

8 large sweet potatoes
8 cherry tomatoes
2 avocados
½ pomegranate
1 red onion
4 tbsp olive oil
1 habanero chilli
400ml crème fraîche
1 bunch of fresh parsley
1 tsp ground cumin
salt
pepper

INSTRUCTIONS

In a bowl, mix fresh cream and cumin. Season with salt and pepper. Set aside in a cool place.
Place each sweet potato on a sheet of aluminium foil and drizzle with oil. Fold over the edges to form a papillote.
When barbecuing, place the papillotes directly on the ashes and cook for 30 minutes.
Meanwhile, chop the parsley, onion and chilli.
Dice the avocado flesh and the cherry tomatoes.
Mix everything together in a bowl.
Check for cooking with a knife.
Once tender, open the wrappers and slice the potatoes lengthwise.
Top with the mixture. Add pomegranate.
Garnish with spicy cream when serving.
