Stuffed mushrooms au gratin RECIPE

PREPARATION: 30 MINS | COOKING: 20 MINS | SERVES: 4

Champignons farcis magret et de canard gratinés au parmesan

INGREDIENTS

  • 8 large button mushrooms
  • 1 duck breast
  • 3 potatoes
  • 2 shallots
  • 2 garlic cloves
  • 100g grated Parmesan
  • breadcrumps
  • 1 tbsp olive oil
  • a bunch of fresh thyme
  • pepper

INSTRUCTIONS

  1. Preheat the oven to 180°C.
  2. Remove the stems from the mushroom heads. Set them aside.
  3. Boil the potatoes whole.
  4. Meanwhile, finely chop the mushroom stems, thyme, garlic and shallots in a bowl.
  5. Cut the duck breast into thin slices. Sear them in a pan.
  6. Once cooked, easily remove the skin from the potatoes to mash them.
  7. Add the mashed potatoes to the bowl. Mix with the parmesan and the pre-cooked duck breast pieces. Season with pepper.
  8. In an oiled casserole dish, arrange the mushroom heads, domed side down.
  9. Garnish them with the stuffing.
  10. Sprinkle with grated parmesan and breadcrumbs.
  11. Bake in the oven for 20 minutes. Serve hot!
