Scallop carpaccio recipe

PREPARATION: 20 MINS | NO COOKING | SERVES: 4

SCALLOP CARPACCIO

INGREDIENTS

  • 12 scallops
  • 1 tsp pink peppercorns
  • dash of hazelnut oil
  • 1/2 tonka bean
  • Guérande fleur de sel

PREPARATION

  1. Rince and pat the scallops dry. Put them in the freezer for 10 minutes.
  2. Meanwhile, crush the pink peppercorns in a mortar.
  3. Take the scallops out and slice very finely using a mandolin.
  4. Put onto four plates for presentation.
  5. Sprinkle over the crushed pink peppercorns.
  6. Grate the tonka bean lightly over the plates.
  7. Drizzle over the dash of hazelnut oil.
  8. Cover and put in a cool place.
  9. Sprinkle over the fleur de sel before serving.
