BEEF CHIMICHURRI RECIPE

PrEpARATION: 10 mInS | resting: 4 hrs | cooking: 25 mins | serves: 4

INGREDIENTS

4 beef fillets, 180g each

1 bunch of chopped parsley

1/2 bunch of chopped coriander

2 tbsp fresh oregano

1 tbsp fresh thyme

2 chopped shallots

2 crushed garlic cloves

1 chopped Cayenne pepper

1 tbsp ground cumin

2 lime peel stripes

2 tbsp vinegar

8 tbsp oil

salt and pepper

INSTRUCTIONS

1. In a mortar, crush all the ingredients (except the meat and oil).

2. Pour in the oil to emulsify the mixture. Add salt and pepper to the chimichurri sauce.

3. Put the beef fillets in a high-sided dish without overlapping them.

4. Brush them with the sauce. Cover with cling film and keep the marinade in the fridge for at least 3 hours.

5. Keep the remaining sauce to serve at the table.

6. Take the meat out 1 hour before cooking.

7. Preheat your oven to 220°C

8. Place the fillets on an oiled baking tray. Bake them in the oven according to their thickness and your taste (Medium: 25 minutes, Well done: 35 minutes).

9. Before cutting and serving, cover the meat with aluminium foil for 10 minutes to make it more tender.

Suggestion for accompaniment: Rice, fries
