Whether it's for a Trou Normand or for dessert, you'll enjoy a refreshing touch.
This subtle-tasting elixir will make you love Champagne in all its forms!
• 200g sugar
• 0.75L Demi-Sec Champagne
• 1.25L water
• 1 organic lemon
1.Grate the lemon peel. Place the peel in a sieve and immerse in a pan of boiling water for 1 minute.
2. Squeeze the lemon, remove the seeds. Pour it into a saucepan with 1.25L of water.
3. Bring the lemon water to the boil with the sugar. Leave to simmer for 3 minutes, then pour the syrup into a bowl.
4. Add the blanched lemon peel.
5. After cooling, pour in the Champagne. Stir well.
6. Transfer the mixture to a wide, long dish so that as much of the surface as possible is in contact with the cold air. (No more than 2 to 3 cm thick)
7. Place in the freezer for at least 2 hours, as well as the individual cups, so that they are cold when served.
8. Every 15 minutes, slit the surface of the ice with a fork as it solidifies. This will freeze it into ice crystals. The consistency must remain liquid so that the granita can be drunk.
9. Serving: In the chilled glasses, arrange the granita in a dome shape.
10. Decorate with a mint leaf.
This recipe does not require an ice-cream maker, and this subtle-tasting elixir will serve as a palate cleanser, also known as Trou Normand for special occasions: Christmas, New Year's Eve, weddings, birthdays and other special occasions.

Care should be taken to select a Demi-Sec Champagne which has a higher sweetness than Brut Champagne. This treat can therefore also be enjoyed with dessert.
As its name suggests, this gastronomic tradition comes from Normandy: it consists of drinking a small glass of calvados between different dishes to aid digestion.
With time, the brandy is now found on every table in France and is accompanied by a sorbet during festive meals, the famous "colonel".
A sorbet that can even be combined with the alcohol of your choice: green chartreuse, yellow chartreuse, génépi, cognac, armagnac, vodka, cherry kirsch, tequila, mezcal, cointreau...
