Limoux is located south of Carcassonne in the southeastern France and is one of the oldest appellations in France. The Mediterranean climate is moderated by altitude and sea breezes. Both red and white wine is produced here. Historically however Limoux is best known for its sparkling wines Blanquette de Limoux and Crémant de Limoux. In fact it is the birthplace of some of the world’s oldest sparkling wines. The red wines must be a blend of three varieties from which the dominante variety must be Merlot (minimum 45% of the blend). The other varieties often are Cabernet Sauvignon, Malbec, Grenache or Syrah. The Limoux red wines are often lighter in body than the ones from the neighbouring appellations due to the higher altitude. The whites are made of the local variety Mauzac together with more known varieties Chardonnay and Chenin Blanc. The Limoux whites wines are light and fruity showing white fruit aromas such as green apple and pear. They are perfect match for fish and seafood.
