Located between Bergheim and Bennwihr, in the heart of the Alsatian vineyards, Vignoble du Rêveur is an independent estate founded in 2013 by Mathieu Deiss and his partner Emmanuelle Milan. Mathieu hails from the renowned Domaine Marcel Deiss , a leading name in fine Alsatian wines. With Vignoble du Rêveur, he is developing, alongside Emmanuelle, a more personal and experimental project, based on a free-spirited, committed vision that is deeply respectful of life. The estate covers 7 hectares of Quaternary alluvial soils, where the vines are cultivated using organic and biodynamic methods (Demeter certification). No grapes are purchased: each cuvée comes exclusively from the estate’s own plots, guaranteeing authenticity and consistency. In the cellar, the approach is minimalist: fermentation with indigenous yeasts, minimal intervention, ageing on fine lees — sometimes in amphorae — and very moderate, if not zero, use of sulphur. The aim is to allow the energy of the terroir and the purity of the grape varieties to express themselves fully. Le Vignoble du Rêveur stands out for its great dry and macerated whites, vibrant and textured, combining freshness, depth and aromatic complexity. Riesling , Pinots and other Alsatian grape varieties find a unique expression here, at once structured, briny and intensely lively.
