It was in 1989, during a meal, that two cousins, Martin Shaw and Michael Hill Smith, both renowned wine professionals, decided to realise an old dream: to produce their own wines. They chose Adelaide Hills and its hillside vineyards with a temperate climate, capable of producing the wines they had in mind: modern, aromatic and fresh. The two cousins have just celebrated their twentieth vintage and their gamble has more than paid off: now among the undisputed leaders in their region, their Sauvignon Blanc has become a benchmark for its type, joined since by splendid Chardonnay and Shiraz vintages that share the same characteristics of intensity, clarity and deliciousness. The estate produces wines from purchased grapes and from its two own vineyards. The first, "M3 Vineyard", was acquired in 1994 and covers 43 hectares in the Woodside region. Located at an altitude of over 400 metres, it is planted with Sauvignon Blanc and Chardonnay. The second was purchased in 1999 and replanted the following year with the estate's four grape varieties from carefully selected clones: Sauvignon Blanc, Shiraz, Pinot Noir and Riesling . The two cousins take a resolutely organic approach to viticulture and pay meticulous attention to the quality of the grapes harvested: high planting densities, low yields, perfect ripeness and manual harvesting. Vinification takes place in a modern winery completed in 2000, with a focus on maximising and precisely expressing the fruit and natural freshness of the wines.
