The grapes from this Peter & Peter estate originate from the Rhine region of Germany , where it is said that the best ones grow along the banks of the Moselle on the beautiful steep south-facing hillsides. There are six categories of Riesling that indicate the ripeness of the grapes. Kabinett is considered "medium dry" and is a generally ripe grape. Spätlese is riper and therefore sweeter, and Auslese is even riper. Beyond that, you have Beerenauslese, Trockenbeerenauslese and Eiswein (or ice wine), all of which become sweeter, more viscous and more expensive. It is a favourite because of its willingness to play with a wide variety of foods, especially spicy dishes. It is believed that the current boom in Asian fusion cuisine has had a significant effect on the popularity of Riesling and, consequently, this estate!
