The Domaine le Clos du Serres (hills in Occitan) located in Saint-Jean-de-la-Blaquière in the Languedoc , is operated by Sébastien Fillon and his wife Béatrice. It was in 2006 that the couple chose to buy the estate because of the particular climate it enjoys and the geological diversity of its soils. They were joined by Nicolas Mollard, their brother-in-law in 2011. The 15 hectare estate is surrounded by the Larzac mountains, 45 km northwest of Montpellier, at the crossroads of 2 climates: Mediterranean and mountain. The entire estate is certified organic . It was awarded the Terrasses du Larzac AOC in 2014. The different wines are made from grape varieties such as Carignan, Cinsault, Œillade, Grenache and Grenache Blanc, Roussanne, Syrah , and Vermentino. Meticulous work is done to bring the most sincerity to each cuvée, manual harvests, serious sorting, and plot vinification in order to let each terroir express itself through the wines produced.
