The estate covers around twenty hectares and is located in the small village of Les Loges. The vines are planted on several types of terroir, mainly limestone, caillottes and white earth. These exceptional terroirs are responsible for the wines' typical minerality. The proximity of the Loire River gives us a unique microclimate. All the plots of Domaine Jonathan Pabiot have been cultivated organically since 2006 and certified biodynamic since 2016. The vines are cultivated using traditional methods, with great attention paid to respecting the plants and living organisms. The edges of the plots, hedges and fruit trees are preserved in order to maintain life and symbiosis between the vines and their surroundings. In order to respect the soil, ploughing is limited to winter and spring. The plots are unique in that they are mainly planted on steep slopes and terraces. Benefiting from the expertise developed by his elders, organic farming was an obvious choice for Jonathan when he set up in 2005. Observation and intuition led him to take a particular interest in biodynamics. It didn't take him long to understand the importance of the connection between plants, minerals and the stars.
