Azienda Agricola COS was founded in 1980 by Giambattista Cilia, Giusto Occhipinti and Cirino Strano: three friends then students who wanted to return to the vine and to the wine, the work of their ancestors. The initials of their names formed that of the estate, originally made up of 3 hectares of vines for hire from the old family property: the first wine was born in 1980, with only 1470 bottles produced. From the beginning of the 90s, the principles of biodynamic viticulture were applied to find and maintain a natural harmony allowing the wine to fully express the character of the terroirs on which the vines are located. The use of terracotta amphorae, which offer thermal inertia, preservation of the fruit and provide no exogenous flavor, began in September 2000 with the Pithos cuvée, and which gradually affirmed the unique style of wines from the COS domaine. This domaine thus finds itself the pioneer of wine making in amphorae, undoubtedly the only one at the time to experiment outside Georgia. Giusto Occhipinti (who is Arianna's uncle, a talented winegrower) began in the early 2000s an intellectual exchange with Elisabetta Foradori, who will contribute to mutually enrich their visions of wine and install fruitful research directed towards the expression of the more natural wine.
