Fixin AOC
A Côte de Nuits Vineyard

Pronounced "Fis-san", Fixin is located in the Côtes de Nuits vineyards in the Côte-d'Or, the northernmost wine region of Burgundy. It is an Appellation d'Origine Contrôlée not far from Dijon. A quarter of the AOC is Premier Cru, offering a red wine and a rarer white wine. Both are made from the Burgundian grape varieties Pinot Noir and Chardonnay respectively. The red wines are robust and racy: wines that can be kept for a long time, especially for the Premiers Crus. The white wines have a frank and pleasant taste.

RED WINE

Appearance: Colourful red wine, with a purple colour that can turn dark

Nose: The bouquet of Fixin red blends are floral (violet, peony), fruity (blackcurrant, morello cherry, blackberry, quince sometimes), animal (musk) and spicy (pepper) aromas. Notes of cherry pits are not uncommon, as well as liquorice scents.

Palate: It is a robust, racy yet delicate wine. Often tannic and a little harsh when young, it needs a few years in the cellar to express its potential. It then presents a round attack and a solid structure. Its texture is remarkable, combining fullness and finesse. Premier Cru though each have their own character.

Serving Temp:14 to 16°C

Ageing potential : 5 to 10 years Very good aging, especially for the first growths.

WHITE WINE

Appearance: Golden straw yellow colour

Nose: Rosehip bouquet on a mineral, slightly muscatel background.

Palate: Rarer than the red wines of the appellation, Fixin white is appreciated for its frank and pleasant taste.

Ageing potential : 3 to 6 years

RED WINE Fixin has a tannic structure which is perfect for fine meat dishes (braised pork, entrecote with parsley, Bresse chicken with morels, poultry stew). World cuisine: It also goes well with Indian cuisine (curry, tandoori), paella, tapas, egg rolls or samosas. Cheeses: Chaource, Comté, Époisses.

WHITE WINE Fine fish (monkfish). Seafood, raw shellfish. Poultry in white sauce. Hot starters. Ham with parsley. Cheeses: Goat cheese (Crottin de Chavignol), blue-veined cheeses such as Bresse blue cheese.

FIXIN, AN APPELLATION OF BURGUNDY PREMIER CRUS

On a tour of the Grands Crus of Burgundy, you should make a stop in the communes of Fixin and Brochon.

A quarter of the AOC is Premier Cru: in the commune of Fixin, there are Aux Cheusots, Clos de la Perrrière, Clos Napoléon, En Suchot, La Perrière, Le Clos du Chapitre, Le Village, Le Meix Bas, Les Arvelets, Les Hervelets; in the commune of Brochon, there is Clos de la Perrière, Queue de Hareng.

BIO AND BIONYAMY: SECOND NATURE!

Without being declared, Pinot Noir is cultivated organically or biodynamically, as are most of the vineyards of the prestigious surrounding appellations. Green harvesting, by hand, is increasingly practiced in this appellation, an operation carried out with the aim of regulating yields and above all increasing the quality of the remaining grapes. This important detail helps the wines, which are already based on precise plot work, to progress.

LE CLOS DE LA PERRIERE REPUTED TO BE OUTSTANDING.

The highly reputed Clos de la Perrière stands out among all the Premiers Crus of the Fixin appellation. It has been described as an "outstanding" vintage by eminent Burgundian critics and compared to Chambertin.

Contrary to what one might think, there are no Grands Crus in Fixin. But thanks to the exceptional quality of this climate and its ideal South-East exposure at an altitude of between 350 and 380 metres, the vines that grow on this brown limestone produce very promising grapes. With a nose of red fruits and silky tannins, it is distinguished from the other Crus of the appellation by a mineral trait reminiscent of its original soil.
