Wild Mushroom Tartlets RECIPE

INGREDIENTS

  • 1 ready-rolled puff pastry
  • 2 chicken breasts
  • 20g butter
  • 250g mushrooms (depending on the season: cep, girolle, hedgehog, chanterelle, black trumpet…)
  • salt
  • pepper
  • 4 eggs
  • 2 tbsp crème fraîche
  • 50ml chicken gravy

INSTRUCTIONS

  1. Preheat the oven to 180°C.
  2. Roll out the puff pastry on a work surface and use a cookie cutter to cut out rounds. Line the tartlet tins with the pastry discs and bake for 10 minutes.
  3. In the meantime, cut the chicken breasts into pieces. Fry them in the butter in a hot pan over a low heat for about 10 minutes.
  4. Add the mushrooms, chopped if necessary. Season to taste with salt and pepper. Cook for 10 minutes, stirring regularly.
  5. In a bowl, beat the whole eggs with the crème fraîche, chicken gravy, salt and pepper. Then add the chicken and mushroom mixture.
  6. Divide the mixture among the tartlet bases. Bake for about 25 minutes.
  7. Serve immediately.
