Warm Fig and Goat's Cheese Salad

ingrEdients

  • Mixture of salad leaves (mesclun, lettuce, rocket, chicory, etc.)
  • 2 slices of goat's cheese (about 60-90g each)
  • 4 figs
  • honey
  • 4 slices of toast
  • 4 thin slices of duck breast fillets
  • sun-dried tomatoes
  • olive oil
  • balsamic vinegar
  • guérande salt
  • ground pepper

prEparation

  1. Start by washing and spinning the salad leaves.
  2. Wash the figs and cut them into quarters.
  3. Cut the goat's cheese slices in half lengthwise and put them in the oven for five minutes
  4. Divide the salad, sun-dried tomatoes and duck between four plates. Finish with the toast.
  5. Put the goat's cheese slices on the toast.
  6. Drizzle the olive oil and honey over the melted cheese. Keep the balsamic vinegar for the salad.
  7. Place the figs on the side of the plate. Season with salt and pepper.

A very aromatic dry white wine with a lot of freshness. The white wines of the Ventoux appellation are simple summer wines, perfect for sharing with a salad. Among the best wines of the appellation, we choose the cuvée domaine de Fondrèche. A real delight for its floral bouquet (acacia, hawthorn, honeysuckle) and its notes of pear, citrus and vanilla. Here is a Ventoux AOC that will add a touch of sweetness and savouriness to our recipe.

VENTOUX BLANC 2021 - DOMAINE DE JU


The elegance of this wine brings together two grape varieties: 80% Roussanne and 20% Marsanne. It offers a fresh, almost explosive nose, fruity and with a hint of iodine notes, which echoes a lively palate that tickles the taste buds and offers a persistent finish on white-fleshed fruits such as pear or peach.

This 2021 vintage can also be enjoyed as an aperitif, to accompany a warm goat cheese salad. A treat in summer as well as all year round!
