Skewered chicken strips Recipe

ingrEdients

  • 3 free-range chicken breasts
  • 2 tbsp sesame oil
  • 1 tbsp flour
  • 4 tbsp tahini (sesame paste)
  • 1 tbsp sesami seeds
  • 3 cloves of garlic
  • 1 small red chilli pepper
  • 200ml water
  • dill
  • parsley
  • 2 limes
  • salt
  • ground pepper

prEparation

  1. Sauce: Put the tahini in a bowl. Gradually stir in the water, a bit at a time, until it reaches a thick sauce consistency.
  2. Add the juice of one lime, finely chopped chilli, crushed garlic, finely chopped parsley and a pinch of salt.
  3. Prepare the barbecue. Cut the chicken breasts into thick strips.
  4. Stab them onto the skewers lengthwise.
  5. Coat them in the sesame oil. Season with salt and pepper. Lightly coat with flour.
  6. Cook the skewers for 4 mins on each side.
  7. Roll the skewers in the sesame seeds. Add some sprigs of dill.
  8. Serve with the sauce and quartered lime.

You can marinate the chicken strips in the sauce for two hours if you would like more flavour.

Tahini, tahin, tahina, tehina or tehine is a sesame cream. This oriental preparation made from crushed sesame seeds is used in hummus, which is better known, but also on skewers or kebabs.

Grilled poultry goes well with a well-balanced and fragrant red wine. Our experts suggest the Ventoux appellation.

These are supple and light wines. With their light ruby colour, they give off a whole bouquet of aromas confirmed on the palate by a rich and nuanced taste.

Château pesquié, a flagship estate of Rhône


A family adventure spanning three generations... In the early 1970s, Odette and René Bastide bought Château Pesquié to create their first Ventoux AOC in 1973. In the mid-1980s, Edith & Paul, daughter and son-in-law of René & Odette, decided to abandon their medical careers to take over the family business. After acquiring numerous diplomas, they brought real added value!

In 1989 the quartet finally decided to leave the local cooperative to create the Château Pesquié cellar and make their first wine on a fabulous vintage! 1990! The birth of "Quintessence"! Even today, if you have the chance to taste it, you will be surprised by its freshness!!

Since 2003, Paul and Edith's two sons, Alexandre and Frédéric, have taken up the torch and continue with the same concern for the expression of the Ventoux terroir. Today, Château Pesquié is one of the leading estates in the appellation and in Southern Rhône, and this generation intends to keep the "Sacred Fire" burning...
