Scallops in ponzu sauce RECIPE

PREPARATION: 10 MINS | MARINADE: 1 HR | COOKING: 4 MINS | SERVES: 4

INGREDIENTS

  • 8 scallops
  • 4 tbsp sake
  • 3 tbsp ponzu sauce
  • 1/2 tsp rice vinegar (mirin)
  • 1 tbsp soy sauce
  • 1 tbsp neutral oil
  • Seasoning suggestions:
  • black sesame seeds
  • crushed peanuts
  • citrus fruits
  • red shiso leaves
  • coriander

Scallops in Ponzu Sauce & Viña Esmeralda

PREPARATION

  1. Clean the scallops
  2. Marinate the scallops with the sake, rice vinegar (mirin) and soy sauce for 1 hour. Keep the marinade.
  3. Heat a frying pan with the oil over high heat and fry the scallops on both sides. (2 mins)
  4. Add 2 tablespoons of marinade and caramelise for 1 minute.
  5. Add the ponzu sauce and heat for 30 seconds.
  6. Enjoy straight away!
  7. Suggestions for accompaniment: White rice and steamed vegetables

Do you know ponzu? A very popular sauce in Japan, ponzu is made from Japanese citrus fruits such as yuzu, which is reminiscent of lemon, grapefruit or citron. Also made with sweet rice vinegar (mirin, a basic ingredient in Japanese cuisine), ponzu sauce combines acidity and bitterness. Its taste is close to the fifth flavour known as umami.

Umami complements and balances the sweetness, saltiness, acidity and bitterness of a dish. It can be described as a lingering flavour that covers the whole tongue: a unique flavour straight from Japan!

To marry the strong taste of the 5 flavours of our dish, we have chosen a very aromatic dry white wine that will express all the intensity of its floral and fruity notes. With the Viña Esmeralda, the alchemy between the fruity sweetness of the Moscatel and the spicy touch of the Gewürztraminer will surprise the palate of the finest culinarists! Smooth and delicately gourmand on the palate, evoking a slight taste of honey, each sip of Viña Esmeralda releases subtle floral and fruity notes: orange blossom, acacia, jasmine, fresh yellow fruit and lychee.

Ideal with seafood, this wine goes very well with scallops and the ponzu sauce for its refreshing side.
