To accompany this autumnal dish, our experts suggest a red wine, round and distinguished on the palate. Denis and Thomas Gambier offer us a safe bet in the Bourgueil appellation! The two brothers exercise their talent as winemakers on the Ouches estate, a 16-hectare vineyard located between the ancient duchies of Anjou and Touraine. Igoranda, which means "door" in the ancient language, is an authentic introduction to the Bourgueil appellation: the star grape variety is Cabernet Franc, here enhanced by a remarkable tannic structure. Novices and connoisseurs alike will appreciate this highly expressive, straightforward and distinguished wine. From a gravelly terroir, the hand-picked, selectively sorted, ripe berries continue the winemaking process through the fermentation stage, using only indigenous yeasts and no filtration, before being matured in casks. This special care preserves all the fruitiness of the harvest.
In the glass, you get a Bourgueil with a dark ruby colour. The nose is flattered by an intense bouquet of black and red fruits: aromas of violets and bilberries stand out. Round on the palate, solid and pleasant, with a sweet, distinguished note - there's no doubt about it, this is a Bourgueil! Fruity flavours and an irresistible smoothness, ideal for our autumn recipe! A convivial wine to have on hand when friends arrive.
