IngrEdients

  • 100g flour
  • 80g slightly salted butter, softened
  • 100g grated parmesan
  • 300g wild mushrooms
  • 150 steamed chestnuts
  • 2 cooked potatoes
  • 1/2 pumpkin
  • 50g lardons
  • 1 onion
  • 1 bunch of flat-leaf parsley
  • 1 sprig of thyme
  • salt and pepper

PrEparation

  1. Wash and dry the mushrooms and cut if necessary.
  2. Preheat the oven to 180°C.
  3. Peel and dice the pumpkin and potatoes and steam for 6 to 8 minutes.
  4. Meanwhile, chop the onions and finely dice the chestnuts.
  5. In a pan, melt some butter. Brown the mushrooms, lardons and onion with a bit of thyme.
  6. Once golden, add the pumpkin, potatoes and pieces of chestnuts. Season with salt and pepper. Cook on a low heat for 5 minutes.
  7. Line the base of a casserole dish with the mixture.
  8. In a bowl, mix the flour, butter, in pieces, and parmesan with your hands to make a fine breadcrumb texture.
  9. Crumble the mixture over the dish to cover the filling.
  10. Put in the oven for 30 minutes. After cooking, garnish with parsley.

From a gravelly terroir, the hand-picked, selectively sorted, ripe berries continue the winemaking process through the fermentation stage, using only indigenous yeasts and no filtration, before being matured in casks. In the glass, you get a Bourgueil with a dark ruby colour. The nose is flattered by an intense bouquet of black and red fruits: aromas of violets and bilberries stand out.
